METHOD: Preheat oven to 425 °F or 220 °C. In a small bowl mix the raisins, brown sugar, cinnamon and butter together with a spoon. Roll out the pastry into four 8″ (20 cm) rounds. Peel and core the apples and place each in the centre of a pastry round. Carefully spoon and pack the filling into each apple. Bring the pastry up around the apple leaving a small opening at the top – trim any excess pastry so that the pastry will hold its shape while baking. Place on parchment paper in a baking dish and brush with egg wash. Bake for 25 – 30 minutes, until pastry is golden-brown and apples are tender. Sprinkle with sugar after removing from the oven. Serve with English custard or ice cream. |
